These maple chipotle salmon bites are tender and juicy flavor bombs served with refreshing slaw and mango salsa. It’s such a filling meal and one that is simple, tastes incredibly fresh and ridiculously satisfying.
It’s no surprise that this is my favorite way to make salmon. I have so many similar recipes with different flavor profiles. They are made the same way because it’s foolproof, easy and creates such a delicious little sauce!
The maple chipotle combo is so good – a little bit sweet with a little bit of heat. It’s savory and slightly spicy but the sweetness cuts the kick.
And the mango salsa! It’s the perfect complement because it’s cool against the warm salmon. It tastes bright and summery for the most welcome flavors this time of year.

This is how I make it!
My foolproof salmon starts with a good seasoning. Salt, pepper, garlic powder, chipotle chili powder. That’s it! Cut the salmon into chunks and cover it all over with the spices.
I like to use a hot skillet with some olive or avocado oil. The key is to get a good golden sear on the salmon for flavor and crunch!
Because the salmon is cut into chunks, it cooks up quickly. Once it’s browned and flipped at least one time, I add in the maple syrup mixture.
This bubbles up and finishes cooking the salmon while getting nice and saucy and sticky! It is SO freaking good.
I like to make both a slaw and a salsa to go with the salmon. The slaw is like the base – think of it as the salad base. A little briney and very crunchy and crispy.
The mango salsa is a great topping. You can use a little or a bunch and sprinkle it over top for that fresh sweetness.
Of course, you don’t have to be crazy extra and dramatic like me – you can always choose to make one of them.
The slaw OR the salsa. And serve it with some jasmine rice too.
This is one of those meals that we all love. I go light on the chipotle if the kids are having it.
They may not eat the slaw, but they are in it for the salsa!
Sometimes for a quick and easy lunch, I’ll reheat the salmon and serve it over just the slaw. It’s so light and filling!
Plus, when it tastes this amazing, no one can resist.

Cut the salmon into 1-inch chunks. Season all over with salt and pepper and the cihpotle chili powder and garlic powder, making sure all sides are covered..

Heat the olive oil in a large cast iron skillet over medium heat. Add the salmon pieces in a single layer (you may have to do this in a double batch so they all fit). Cook for 2 to 3 minutes until deeply golden brown. Flip each piece of salmon and cook on the other side until golden.

Whisk together the maple syrup, water and garlic cloves until combined. Pour it into the skillet and cook until it’s bubbling. Let it simmer and bubble for 2 to 3 more minutes before turning off the heat.

Serve the salmon over the slaw, jasmine rice and top with the mango salsa.

In a bowl, toss the cabbage, pepper, red onion and cilantro together. Add a drizzle of olive oil and a few spritzes of fresh lime juice. Sprinkle on salt and pepper and toss.
Let’s hear it for the texture.
